Israel's new wine map is already in your team's course

On 6 September 2026 the Wine Regions of Israel map was launched for the first time: 18 defined regions, each with altitude, climate and soil, and one clear rule with it: a winery that names a region on the label must source at least 85% of the grapes there. Congratulations to the Ministry of Health, the Ministry of Agriculture and Food Security and the Wine Grape Council on years of work. Our Israeli-terroir chapter was rewritten on it, so a waiter can tell a guest not just "from the north" but "from the Upper Golan".

The map: an official publication of the Ministry of Health, the Ministry of Agriculture and Food Security and the Wine Grape Council, continuing the work of the IPEVO association.

A Look Inside

This is how it looks inside

A short tour of the Israeli-terroir chapter as the team sees it: the map, the five regions, their sub-regions and the differences between them, and wineries by sub-region.

Why It Matters

What it gives the team and the restaurant

An answer with an identity, not a direction

A guest who asks "where is this wine from" gets altitude, soil and climate: "Upper Golan, 500 metres and up, basalt, cold nights". That is the difference between an Israeli wine and a wine from a defined terroir.

Differences that sell

The team learns what separates the sub-regions of one region: who gets Upper Golan and who Lower Golan, when the Judean Foothills and when the Judean Peaks. A recommendation that fits the guest sells more.

The wineries on your list, in their place

Each region's central wineries are grouped by sub-region, so the wine already on your list gets a precise story and one sentence to say at the table.

The Chapter

How the chapter is built

Five regions every waiter in Israel knows by name, and inside each the sub-regions the map defined.
