Growth is not a stage you start. It's a state you reach.
Growth is not a stage you start, but a state you reach. The system runs in full, the teams are used to the routine, and every station has a professional: wine leaders on the shift, certified managers, and a broad team that recommends with confidence.
From here the manager doesn't just follow; they lead. They read the metrics, make changes themselves through the system, own the knowledge metric, and can even raise the restaurant's own target. Growth no longer depends on us. It's part of how the business operates.
And here is the one thing that can't be shortcut: with measurement comes growth. Without measurement, growth is a feeling. With measurement, it's a target you can manage, move, and grow.
The target isn't uniform. It's to grow from where each restaurant stands, by its culinary character. A chef's restaurant can aim high; a casual chain starting low will gain a lot from one step forward. The method doesn't set one bar; it helps each restaurant find its own growth.
THE MISSION
Our mission: a wine team that knows how to sell.
Not at the bar yet, and that is fine, you are building towards it. The index measures how much of the knowledge you gave the team is actually being used. Certifications raise it, people leaving lower it. Start pouring. Step by step the glass fills, and I am with you.
