Implementation is the moment there's no longer a waiter who doesn't know how to sell wine.
Implementation is the moment there's no longer a waiter who doesn't know how to sell wine. The entire service team, from the veteran to the newcomer who started yesterday, goes through the same track and reaches the same bar. It's not training for leads; it's a horizontal certification of everyone.
It all starts with a personal conversation with the manager: aligning expectations, meeting the system, and meeting Haim, the friendly advisor who accompanies the team. The restaurant signs up with its wine list, and the 8 Foundations are built from it too: what you pour by the glass enters the course, a region you do not carry does not weigh on the team, and every chapter ends with your wines on its subject. From there the whole team is automatically enrolled in Wine Foundations, the method's foundation course: the 8 Foundations, what every waiter needs to know about wine, from the question it all starts with (why wine at all) to serving and selling with confidence. A toolkit for every waiter before their first shift, then six weekly foundation chapters.
Throughout the stage the manager gets a progress report, personal and team-wide, showing exactly how many of the team finished each course. The system doesn't wait quietly: it sends reminders and nudges to whoever falls behind, so the whole team crosses the line. With our customers, most of the team crosses the eight-chapter bar within six weeks.
At the end of this stage the restaurant has something it never had: a team that all speaks wine in the same language, on every shift, regardless of who's on.
THE MISSION
Our mission: a wine team that knows how to sell.
Not at the bar yet, and that is fine, you are building towards it. The index measures how much of the knowledge you gave the team is actually being used. Certifications raise it, people leaving lower it. Start pouring. Step by step the glass fills, and I am with you.
